Whole Grain Mustard and Roasted Hazelnut Vinaigrette

2 tbsp whole grain mustard
1/2 small shallot, minced
1 tbsp sherry vinegar
1 tbsp apple cider vinegar
6 tbsp roasted hazelnut oil
Salt and pepper to taste

Mix the mustard, shallot and vinegars together. Whisk in the oil and adjust the seasoning.

Yield: 4 servings.
